Lentil and red bean loaf


Gluton free recipe
Serves 6

1 Teaspoon olive oil
1 medium onion, chopped
1 14 oz can lentils
1 14 oz can red kidney beans
2 eggs
1 carrot, finely grated
1/2 cup grated zuchini
1/4 cup low sodium tomato paste
1 cup cooked white rice
1/2 teaspoon minced garlic
1/2 teaspoon ground pepper
1 cup reduced fat cheddar chesse, grated

1.Preheat oven to 350 degrees. Lightly grease a 9 by 5 inch loaf pan.
2. Heat olive oil in frying pan, add onion, and cook until translucent, 3 to 5 minutes.
3. Rince and drain lentils and beans. Process with onion and egg until smooth.
4. Transfer lentil mixture into a bowl, and stir in remaining ingredients.
5. Pour into loaf pan and bake 1 hour
