End of the summer omelet

Ingredients:
2 organic eggs, beaten
a mix of 9 to 10 colourful mini tomatoes
1 medium red onion, peeled & finely cut up
1/2 red sweet paprika, washed, cleaned & white seeds & white parts removed, cut up into litlle chuncks
a few sprigs of fresh oregano, washed, cleaned & tougher stalks removed

baking margarine
sea salt
 finely grinded black pepper

Preparation:
1. Heat a large non stick pan on medium high heat.
2. When hot, add 3 to 4 tablespoons of the baking margarine & let it melt. When sizzling, add the chopped up onion & chopped up red sweet paprika. Stir.
 Add 1/2 of the oregano & stir.
 After a few minutes, add the cut up tomatoes.
Add the rest of the oregano.
Fry for another 2 minutes.
Now, add the beaten eggs & swirl them around the surface of the pan.
 Add some sea salt & some grinded black pepper according to your taste.
Fry for a few minutes until it is fried to your liking. Enjoy!!
